I understand I can fit either a 3.00 x 10 or 3.50 x 10 on the front and to get a nice fat rear tyre, the 120/70 x 10, without any modification, though not all exhausts clear the rear tyre. I'm looking at Zippy 1's, though the 120/70 looks a much lower profile, will this raise up the front end or cause any problems with steering?, when you stand them side by side the 3.50 seems much higher.

A 3.50 will raise the front end and,IMHO,ruin the handling and quick steering.I'm really not sure that you can fit a 120 on the rear without some modifications and to be honest I see no need to fit one other than as a cosmetic exercise.
A 120/70 weill definately have a smaller radius than a 3.50x10 or a 90/90x10.

90/90's will fit on both front and rear of PK without too much hassle though, wont they?

A long time since I buggered about with trying larger tyres than stock but I don't remember any problems fitting 3.50x10's.

with a 3.50 or 90/90 you get tyre grow at high speed and can touch engine piviot also can rub swingarm esp on primmy a little more space on pk but..........a rear wheel blowout is no fun

I think I'll need to cut away some of the frame at the rear of the pk to fit the 120/70, the bit where you fix the spare wheel to. not sure whether i will bother, though the tyre would look pretty cool!

To fit a 120/70 you have to use wider rims. You then have to use a distance ring to keep clear from engine casing. The wheel will then be offset (bad handling apart from wide wheel bad handling) to compensate you must shorten the casing at the RH engine mount and put a shim at the other side.
Quite a lotta effort to compensate - say is yours really that short or would a 90/90 maybe do? ;D
